Brew(n)zyme is a glucoamylase produced by controlled fermentation of a non-genetically modified strain of aspergillas niger. Possesses the ability to breakdown gelatinized starch and starch functions to >96% D-glucose. Reduce the non-fermentable carbohydrates in fermentation to nearly zero and is effective up to 149°F (65° C) permitting use in the mash application.  Brew(n)zymes is effective over the pH and temperature ranges common to brewery and breaks down starch fractions that contributed to cloudy, starchy beer.  The food grade liquid enzyme is convenient and easy to use.  Pack in 1 ltier bottle.

Dosage:

• 136 mL per 1000 lb. of grain.  Add directly to the mash cooker at the beginning of mash.

• Optimum pH 4.0 - 4.5 and effective pH 3.0 - 5.0

• Optimum temperature 136° - 144°F. (58° - 62° C) and effective 104° - 149° F. (40° - 60° C).
